Rice and Beans - Recipe

Ingredients:

  • 0.5 kg rice
  • 0.5 kg beans
  • 1 large coconut or 4 dl coconut milk
  • 1 clove of garlic
  • small onion, finely chopped
  • oil

Preparation:

Heat the oil and stir-fry the garlic and onion.

Blend the coconut meat with two cups of warm water.

Cook the beans with the blend of coconut and water or with the coconut milk. Add a bit of thyme and the garlic clove. Add water if necessary and cook the beans until they are soft. Add the rice, salt and pepper to taste and simmer until the rice is cooked.

The dish is best accompanied by vegetables and fish or chicken.

Notes:

Rice and Beans is a typical Caribbean dish. In Costa Rica you will find it on the Caribbean slope, in places like Puerto Viejo de Talamanca. It is rather simple to prepare. Basically, it is very similar to Gallo Pinto, but is cooked with coconut.

Typically, this dish is prepared with red beans when served with fish.
