Fried Plantains (Platano Frito) - Recipe

Ingredients:

  • 4 large green plantains
  • vegetable oil
  • margarine

Preparation:

Use very ripe plantains, almost on the point of turning black. If they're still hard, hit them with a wooden spoon to soften.

Peel and slice the plantains in 1/2 inch round. Fry them in a mix of 50% oil and 50% margarine at medium heat until they turn golden.

Serve hot (to keep warm, sprinkle with sugar and place in warm oven).

Preparation Time: 10 minutes

Difficulty: very easy

Notes:

The soup tastes best if it is prepared the day before.
